Fried Mee Hoon


Ingredients:

1 pack / 2 pcs of Mee Hoon
2 slice of Ham cut into piece
Green Vege cut into piece
1 nos Egg
6 - 8 nos Fish Ball cut in half
Oyster Sauce
Fish Sauce
Soya Sauce
Chicken Stock Powder
2 nos Fried Shallot
Pinch of Chinese Celery

Method:
1) Soak mee hoon till soft
2) Fry all the other ingredient (ham, vege, egg, fish ball) till cooked. Add in mee hoon and all the sauces with 1/2 bowl of water.
3) Let the mee hoon absorb all the soup and lastly topping with fried shallot and pinch of chinese celery

Deep Fried Kuih Bakul with banana



Ingredients:-
3 nos Ripe Banana
1pc Kuih Bakul (年糕) (cut into medium size stick piece)
1 packet spring rolls pastry (Small Size)

Method:

(1) Mashed the banana with little bit of sugar

(2) Get ready a sheet of spring roll pastry, line the kuih bakul and banana paste in sandwich form.

(3) Roll it into spring roll form and deep fried till golden brown.

Mixed Vegetarian

 
Ingredients:
 
1/2 can of Vegetarian Abalone (Brand: Fortune) or other similar
1 can of Straw Mushroom cut in half
Long Cabbage 津白 cut in piece
Oyster Sauce
Soya Sauce
3 clove of garlic peeled and chopped
1/2 tablespoon corn flour


Method:
Fry the garlic till golden colour, add in all other ingredients and stir fry evenly. Cover it with slow temperature for 5 mins and then add in mixed corn flour water till boiled

Minced Meat Egg Roll

Ingredients:

 - 300gm of Minced Pork Meat
 - 1 table spoon Corn Flour
 - Salt
 - Pepper Powder
 - Oyster Sauce

Skin:
 - 2 nos of Egg (add pinch of salt and beat well)

Pre-heat the pan and pour in enough portion of egg to make a round shape egg skin. Carefully grill the both side till cooked

Put a side for 10 mins (Do not wrap the meat with hot egg skin)

Method:
Mix the minced pork with corn flour, salt, pepper powder and oyster sauce.
Spread evenly onto the egg skin and roll it up
Steam the rolled egg for 15 mins and cut into piece and eat with your favourite dressing

Asparagus with Pork Shoulder Meat


Ingredients:-
 - 1pkt Imported Asparagus (Cleaned and put into 2.5inch long)
 - 200gm Pork Shoulder Meat sliced
 - Oyster Sauce
 - Soya Sauce
 - Salt
 - Fried Shallot
 - Corn Flour


Remarks:
Pork marinate with salt, oyster sauce, soya sauce & corn flour for couple of minutes

Method:
Cook the asparagus in a pot of hot water with little bit of oil till turn shinning green colour, Rinse and put a side
Pre-heat the pan and add in fried shallot, oil and shoulder meat. Grill till both side turn golden brown. Add in cooked asparagus and stir till even. Add in some water for gravy

Luncheon Meat Egg Noodle 餐蛋面

Ingredients: -

1 pack of Nissin Brand Instant Noodle
1 nos Fried Egg
1 slice of Fried Luncheon Meat

Tips: Can add on Bonito flakes 鲣鱼/柴鱼片 will be more tasty

Sweet N Sour Pork with Tomato

Ingredients: -

 - 600gm of Belly Pork cut in cube
 - Corn Flour or Wheat Flour
 - 1 nos of Tomato (remove seed and cut in cube)
 - 1 nos Slice Shallot
 - Tomato Sauce
 - Oyster Sauce
 - Soya Sauce
 - Salt

Method: -

Marinate and coated the pork with corn flour or wheat flour, salt & soya Sauce. Deep fry till golden brown in colour

Stir fry slice shallot with cooking oil, add in tomato and quick stir

Mix the tomato sauce and oyster sauce with 1/2 bowl of water and 1 teaspoon of corn flour. Pour into the tomato and wait till boiled.

Add in the deep fried pork into the sauce and mix evenly

Sesame Oil Chicken


Ingredients: -

 - 2 table spoon sesame oil
 - 600gm Boneless Chicken Drumstick cut in cube
 - Soya Sauce
 - Few slice of ginger
 - 4 - 6 pcs of Mushroom cut in piece
 - Oyster Sauce
 - Corn Flour
 - Salt

Method: -

Marinate the chicken with soya sauce, salt, oyster sauce and corn flour.

Pre-heat the pan with sesame oil, add in ginger slice stir till brown in colour. Add in chicken (spread evenly onto the pan) grill both side till slightly brown in colour.

Add in mushroom and oyster sauce and quick stir. Add in little bit of water if neccessary (If those prefer to gravy)

Soya Sauce Cod Fish


Ingredients:-

 - Slices Ginger
 - Soya Sauce 1 table spoon
 - Corn Flour 1/2 table spoon
 - Salt 1/2 teaspoon
 - Fish Sauce 1/ teaspoon

Method:-
Marinate the cod fish with salt and corn flour. Grilled till in golden brown colour.
Put at side

Fry the slice ginger with cooking oil till golden brown, add in soya sauce, and fish sauce till boiled. Then pour onto the fish.

Steamed Ham and Onion muffin


Ingrediants:

1.Self raising powder 110g (1 cup)
2.Baking powder 3g (1 tea spoon)
3.Egg
4.Sugar 18g (2 big spoon)
5.Milk (4 big spoon)
6.Cooking oil (1 big spoon)
7.Salt
8.Onion (cut in small pieses)
9.Ham (cut in small pieces)

Method:

1.Put in both self rasing powder and baking powder into the bowl and stir well.
2.Prepared another bowl to mix the egg and sugar and then stir well.
3.Put in the milk into step 2 and stir wel.
4.After that add in the mix well of self rasing powder and baking powder into step 3.
5.Stir well and then add in the cooking oil and some salt.
6. Fried the onion and ham.
7.Lastly put in the well cooking of onion and ham into the mixture and stir well.
8.Pour the mixture into the muffin cup and steam about 12 -15 minutes.

Steamed Milky Almond Flake Muffin


Ingrediants:

1.Self raising powder 110g (1 cup)
2.Baking powder 3g (1 tea spoon)
3.Egg
4.Sugar 54g (6 big spoon)
5.Milk (4 big spoon)
6.Cooking oil (1 big spoon)
7.Instant coffee (prepared the coffee with 1 tea spoon of coffee powder)
8.Milk candy 6
9.Almond flakes

Method:

1.Put in both self rasing powder and baking powder into the bowl and stir well.
2.Prepared another bowl to mix the egg and sugar and then stir well.
3.Put in the milk into step 2 and stir wel.
4.After that add in the mix well of self rasing powder and baking powder into step 3.
5.Stir well and then add in the cooking oil and the instant coffee.
6.Pour the mixture into 6 muffin cup untill half then put one milk candy into each muffin cup, pour  
   the balance of the mixture into each muffin cup until full, after that add some of the almond flakes  
   on the top of each muffin.
7. Lastly steam the muffin about 12-15 minutes.

Steamed Pomfret 蒸鲳鱼

Ingredients:-
 
500 - 600gm Pomfret cleaned (add in salt to marinate)
portion of ginger cut in slice
1 tablespoon Fish sauce
1 nos Shallot (Fry with cooking oil)
Method:
Pre-boiled the water before put the pomfret onto the wok. Add in ginger slice and fish sauce to the fish before steam for 15 mins.
Spinkle the steamed fish with fried shallot before serve

Shrimp in Soup 上汤老虎虾


Ingredients: -
 
600gm Tiger Prawn (cleaned)
1 tablespoon Goji Berry (rinse and clean)
Portion of Slice Ginger
4 tablespoon of Chinese Wine
1 teaspoon Salt
1/4 cup water
Method:
 
Put all the ingredient into a steam plate and steam with high heat for 10 - 15 mins. Ready to serve with mee hoon or grass noodle

Sour Pork 古老肉

Ingredients: -
 
300gm Belly Pork cut in cube
1 tablespoon Corn Flour
1/2 teaspoon Salt
pinch of black pepper
1 teaspoon Oyster Sauce
1 nos Cucumber (small) cut in cube
1 slice Canned Pineapple cut in cube
1/4 cloves Chopped Garlic
Sauce:
1 tablespoon Oyster Sauce
1 tablespoon Tomato Sauce
1 teaspoon Corn Flour
1/2 cup of water
Method:
Marinate the belly pork with salt, black pepper, oyster sauce and corn flour. Deep fry the belly pork till brownish. Put aside
Pre-heat the pan with cooking oil, add in garlic stir till golden colour then add in the rest of ingredient (cucumber, pineapple and pork) into the frying pan. And lastly, add in the premix sauce let it cook till the sauce turn thick.

Brocolli with Scallop

Ingredients: -
 
1 nos (small size) Brocolli
1 pack Frozen Scallop (marinate with a pinch of salt and black pepper)
1 tablespoon Corn Flour
1/2 cloves Garlic Chopped
1 tablespoon Oyster Sauce
1/2 teaspoon of salt
Method:
 
Cut brocolli into small portion and cook with boiled water (remember to add a tablespoon of olive oil into the water) till it turn freshly in green colour. Rinse and put a side
Pre-heat the pan with cooking oil and add in garlic stir fry till golden colour. Add in Scallop (remember to dip both side with corn flour). Let the scallop grill till brownish. Add in brocolli, salt and oyster sauce quick stir till cooked.

Grilled Cod Fish Fillet 烤銀鱈魚

Ingredients: -
 
1 pc Cod Fish
1/2 teaspoon Salt (marinate the fish)
A pinch of Black Pepper (marinate to fish)
1/2 cloves Garlic (minced)
1 nos Shallot (minced)
1/2 nos Chilli (minced and remove seed)
1 teaspoon Corn Flour mixed with water
Method:
Deep fry cod fish till golden colour. Put a side
Pre-heat the pan and add in oil, minced garlic, shallot & chili to stir fly till golden colour and lastly add in corn flour water continue cook till sauce turn thick
Pour the sauce onto the cod fish

Crispy Chicken Wrap 酥脆的雞肉卷

Ingredients: -
 
4 pcs Pita Bread
1 pack Chicken Fillet (Marinated with Salt)
1 pack Fresh Green Lettuce
Thousand Island Sauce
Mayonese Sauce
Wasabi Sauce
Sauces:
Mixed all three type of sauce together with a little bit of olive oil
Method:
Apply sauce to the surface of pita bread and add in veggie and chicken fillet, roll it up and ready to eat

Aglio Olio with Ham 火腿意大利面

Ingredients:-
 
1 handful Angel Hair
1 teaspoon Salt
1 pc Ham cut in slice
1/4 clove Garlic chopped
1/2 teaspoon Chicken Stock Powder
2 tablespoon Olive Oil - to add into cooked angel hair
2 tablespoon Olive Oil - to cook the ingredient Or Butter
1/2 teaspoon Chili Flake
1/2 teaspoon Basil Leave
1/2 teaspoon Parsley Leave
Method:
Cook anger hair in hot water (add in 1 teaspoon of salt) till soft. Rinse and add 2 tablespoon of olive oil.
Pre-heat the fly pan and add in Olive oil / Butter, add in garlic & chili flake cook till oil turn to reddish colour. Add in Ham and angel hair, mixed chicken stock powder & salt with water, basil leave and parsley leave stir till even and ready to eat

Minced Pork with Tofu 豆腐肉碎

Ingredients:-

 - 1 pc Japanese Soft Tofu cut in piece
 - 200gm Minced Pork
 - 1 pcs Shallot cut in slice
Marinate minced pork with:-
 
 - pitch of salt
 - 1/2 teaspoon light soya sauce
 - 1/2 teaspoon oyster sauce
 - 1/2 tablespoon corn flour
 - little bit of pepper powder
Method:
Deep fried soft tofu or grill soft tofu till golden colour both side.
Fried shallot and add in minced pork stir till it cooked. Add in 1/2 bowl of water and cook till it turn to thicker sauce.
Topped the soft tofu with all the minced pork and sauce.
 

Bitter Gourd Black Bean Chicken 苦瓜豆豉焖鸡

Ingredient:
 
 - 1/2 pc Bitter Gourd cut slice (wash it with salt water few times to get rid bitter taste)
 - 1/2 table spoon Black Bean (rinse clean)
 - portion ginger slice
 - 1pc Boneless Chicken cut slice
 - 1 tablespoon Cooking Oil
Marinate chicken with:-
 
 - Pitch of salt
 - 1/2 teaspoon Light soya sauce
 - 1/2 teaspoon oyster sauce
 - 1/2 tablespoon Corn Flour
Method:
Pre-heat the cooking oil, add in black bean and ginger slice stir till you smell the fragrant, add chicken grilled till golden surface, then add in bitter gourd and add in enough water to cook it with slow fire till the water turn to thicker sauce.
