Deep Fried Dumpling


Ingredients:-
600gm Minced Pork / Minced Chicken
200 gm Minced Prawn
1 nos Pear / 5 nos of water chest nut (Chopped)
A pinch of Black Pepper Powder
1 spoon sesame oil
1 spoon olive oil
1 teaspoon salt
1/2 spoon oyster sauce
1/2 spoon soya sauce
Chinese Celery (Chopped)
2 spoon corn flour
Skin:
1 packet Wantan Skin
Method:
- Marinated and mix all the ingredients for 10 mins. Wrap (1 teaspoon portion) into the wantan skin
- Deep fried with enough cooking oil till golden in colour and ready to serve with your favour sauce

Salted Egg Chicken


Ingredients:-
600gm of Chicken Breast (cut in cube)
2 nos Salted Egg Yolk
1 tea spoon of Salt
1/2 teaspoon of Garlic Powder
A pinch of Black Pepper Powder
1 teaspoon of White Rice Wine (Chinese Rice Wine)
3 -4 Spoon of Wheat Flour
1 spoon of butter / margarine
1/2 spoon of Parmesan Cheese Powder
A pinch of Sugar
Method:
- Marinate the chicken with salt, garlic powder, black pepper powder and rice wine for 10 mins. - Add in wheat flour and mix evenly.
- Deep fry the chicken with enough oil till golden in colour
- Steam / boil the salted egg, take out egg yolk portion and smash well.
- Pre-heat the frying pan with some butter, add in the egg yolk stir fried till lots of bubbles, then add in the chicken, add in the parmesan cheese powder and stir till all the egg yolk evenly stick on the chicken.
- Lastly, turn off burner and sprinkle with sugar

Stir Fried Spinach 上汤芫菜


IngredientsL
1 pkt of Spinach
1/4 Clove Garlic (sliced)
1 teaspoon salt
1/2 spoon oyster sauce
1 teapoon chicken stock powder
1 nos Century Egg (Cut in Cube)
1/2 bowl Whitebait (银鱼仔)
1 bowl of water
Method:
- Deep fried Whitebait till crispy put aside
- Fry the garlic slice with oil, put in the spinach and add in the water with all the other ingredients...till water boiled and ready to serve

Sweet N Sour Pork


Ingredients:-
1) 600gm Lean Pork (瘦肉) - Use knife blade to flap till soft and cut into piece
2) Pinch of Black Pepper Powder
3) 1 teaspoon Soya Sauce
4) 1 teaspoon Lea & Perrins Sauce
5) 2 spoons of wheat flour
6) 1/4 clove of garlic minced
7) 1 spoon of tomato sauce
8) 1 spoon of oyster sauce
9) 1 teaspoon of corn flour / potatoes starch
10) 1 cup of water
Method:
- Marinate the pork with black pepper powder, soya sauce and LP Sauce for 10 mins
- Add in the wheat flour and mix well
- Deep fry the pork till it turn to golden brown colour and take it out
Sauce:
- Mix the tomato sauce, oyster sauce and corn flour into the water
- Pour in some cooking oil into the frying pan and add in the garlic and stir so while then add in the pre-mix sauce, keep stirring till it become sticky, then add in the pork, fast mix and ready to serve

Taro Meat




Ingredient:
1) Pork Belly Meat (五花肉) 600gm
2) pinch of Black Pepper Powder
3) 1 teaspoon sugar
4) 1 cube Bean Paste (南乳)
5) 2 spoon Wheat Flour (If want to be crispy, can add more)
Method:
- Boil pork belly meat till 80% cooked, then remove the skin, cut into 1/2 inch thick
- Marinate with black pepper powder, sugar and bean paste and mix well for 10 mins
- Add on wheat flour and mix well
- Pre-heat wok with enough cooking oil, till hot, then put in the pork piece by piece
- Before it turns golden brown colour, take out all and raise the temperature, put in all the meat again into wok and fry till gold brown in colour

Lotus Root Red Dates Chicken Soup 莲藕鸡汤



Ingredients:
1) 1 whole Chicken Bone (Small)
2) 3 teaspoon salt
3) 1 handful red dates
4) 2 segments of Lotus Root
5) 4 cups of water
Method:
Cut the Lotus Root in piecePre-boiled all the ingredient with high temperature then only transfer everything into the slow cooker, cook for 2 hours or till the lotus root turn soft

Chicken Kara-age


Ingredients:
1) 600gm Chicken Tight cut in cube
2) 1 spoon Soya Sauce
3) 1/2 teaspoon salt leave it for 15 mins before cook
4) Kara-age Ko - 1 packet

Method:
Mix 1/3 packet of Kara-age Ko into 1 cup of water (room temperature)
Pre-heat the wok with cooking oil ( which enough cover the chicken)
Put the chicken into the pre-mix kara-age paste (面糊) then put it into the wok piece by piece
Do Not Stir it till for 2 mins ( to prevent the paste drop out from the chicken)
Deep fried till golden colour then is ready to serve

Home Made Spring Roll




Ingredient:
-1 packet Spring Roll Skind
- 2 nos Carrot (Shredded)
- 1 packet Bean Sprout (Cleaned)
- 8 nos Dried Mushroom (Cooked till soft and sliced)
- 500gm Minced Pork
- 300gm Minced Prawn Meat
- 2 teaspoon Salt1 spoon soya sauce
- 1-1/2 spoon oyster sauce
- Black Pepper Powder
- 1 spoon corn flour
- 1 teaspoon sesame oil
Method:
Marinate the minced pork and prawn with soya sauce, salt, oyster sauce, black pepper powder, sesame oil and corn flour for 5 mins
Pre-heat the wok, pour in enough cooking oil, and fry the marinated meat till cooked.
Add in all the other ingredients and cook till everything turn soft and water seep out from the vegetables. (DO NOT ADD IN ANY WATER)
Wrap the cooked ingredients in spring roll skin, and seal the close end with the ingredient gravy. Deep fried till golden colour and ready to serve with your favour dressing or chilli sauce.


Fu Yung Egg



Ingredient:
- 2 nos Egg (Beat well)
- 1 teaspoon salt
- 1/2 nos Onion (Shredded)
- 1 nos Tomato (Cut in Cube)
- 150 gm Minced pork
- 1 spoon corn flour
- Pinch of black pepper powder
Method:
Marinate the minced pork with salt, black pepper powder and corn flour for 5 mins
Pre-heat fry pan with oil, add in onion and cook for 2 mins or when it turn soft, then add in minced pork, fry till it cooked, add in tomato, fry for another 2 mins, till all the ingredient turn soft, then pour in the egg.
Leave it for 2 mins till the base egg formed, then turn to another side with same way then ready to serve

Fried Baby Siew Pak Choy


Ingredient:
- 1 pkt Baby Siew Pak Choy
- 1/4 clove of garlic minced
- 1/2 teaspoon of salt
- 1/2 spoon of oyster sauce
- 200gm Lean Pork Meat (瘦肉) cut in slice
- 1/2 spoon of soya sauce
- 1 spoon of corn flour
- 1/4 cup of water
Method:
Marinate the lean pork meat with soya sauce and corn flour for 5 mins
Pre-heat the wok with oil, and add in garlic and marinated meat, fry till it turn in golden brown, add in baby siew pak choy and fry till soft, then add in salt and oyster sauce and water, stir-fry till all the taste goes evenly

Beancurd Minced


Ingredient:
- 300gm Minced pork
- 1/2 teaspoon Salt
- 1/2 spoon Oyster Sauce
- 1 spoon Ready-made fried shallot
- 1/2 spoon soya sauce
- 1 spoon Corn Flour
- 1 block Soft Beancurd
- 2 spoon of cooking oil
Method:
Marinate the minced pork with salt, oyster sauce, fried shallot, soya sauce and corn flour for 5 mins
Pre-heat the wok with oil, add in the marinated minced pork fry till fully cooked, meanwhile, steam the Soft Beancurb for 5 mins, then take out, pour in the minced pork on top and ready to serve

Grilled Fish with XO Sauce

Ingredient:
- 1 nos Any type of fish
- 1/2 teaspoon Salt
- 2 spoon XO Sauce
- 1/2 spoon Sugar
- 1/4 cup of water
Method:
Grilled or fry the fish till gold in colour with enough cooking oil.
Take out and put a side Pre-heat the frying pan with little bit of oil, stir fry the XO sauce with sugar, until smell the fragrant, then add water let it boiled and pour on the fish

Potatoes Chicken



Ingredients:
- Boneless Drumstick Meat 1 pcs
- 1/2 Table Spoon Oyster Sauce
- 1 tea spoon salt
- 1 tea spoon soya sauce
- 1/2 tea spoon black sauce
- 1 Table spoon corn flour
- 1 nos potato cut in 1/2cm slice
- 1/2 Clove Garlic sliced
Method:
Pre-heat wok with some oil, add in garlic and potatoes till slice golden colour then add in the chicken. Stir Fry till turn in golden yellow then add in 1/2 cup water. Cover and turn to lowest temperature for 10 mins until the Potato soft enough to serve.

Drunken Tiger Prawn


Ingredients:
- 6 nos of Giant Tiger Prawn
- 1 Tea spoon Salt
- 1 Tea spoon Soya Sauce
- 2 Table spoon Rice Wine
- small portion fine chopped ginger
Method:
Steam for 15 mins and ready to serve

Shrimp Sambal (虾米叁巴)

Shrimp Sambal (虾米叁巴)

Ingredient
1/2kg - Dried Shrimp - Rinse with water
8 nos - Red Chillis (Remove seeds) Cut in Cube
10 nos - Shallot
2 nos (whole) - Garlic


Blend everything till fine then portionly fried with cooking oil till golden brown colour ( or lots of bubble come out)

Dumpling 锅貼

Homemade Dumpling 煎锅貼




First, make doughs of 1.5" size each, then push till thin enough at size: 4"


Ingredient:
- Minced Pork
- Salt
- Sesame oil
- Oyster Sauce
- Soya Sauce
- Corn Flour


1. Mixed well and wrap inside the dumpling skin, then wrap it like a shape of " Yuen Pao"
2. Pre-heat some oil and grill it side by side, then add in 1/4 cup of water and covered for few mins till fully cooked
