Braised Pork with Eggs

Braised pork with eggsIngredients:-
600 gm Pork belly 五花肉 / Spare Ribs (Cut into cubes / chunks)
5 pcs Hard boiled eggs (remove egg shell)
1/2 tsp Salt
1/2 tsp Light soya sauce
1/2 tsp Dark soya sauce
1/2 spoon Sugar
1/2 tsp Pepper
1/4 tsp Five Spices Powder 五香粉
1 tsp Oyster Sauce
2 cloves Garlic peeled off the skin
1 spoon Corn Flour
Water
(1) Marinate the pork with salt, soya sauce, dark sauce, pepper, five spices powder, oyster sauce and corn flour for half an hour.
(2) Heat up a pan and cook sugar till fully melted or light caram. Then pour in the marinated pork and garlic. Stir well.
(3) Cover the pan and turn to the lowest temperature and cook for 20mins.
(4) Last, add the hard boiled eggs and some water and let it cook for another 30mins with lowest temperature.

Nutritious Dried Oyster Chicken Soup

Stew Dried Oyster Chicken Soup Ingredients:-
1/2 Free range Chicken (cut into pieces)
8pcs Dried Oyster
1½ tsp Salt
800ml Water

(1) Cut the chicken into pieces while bring the 800ml water to boil in a wok.
(2) Add chicken pieces and dried oysters to the wok and cook for 5 mins.
(3) Prepare a stew pot (or slow cooker) and transfer all the soup, chicken and dried oyster to the pot.
(4) Add in salt and stew slowly / simmer for 3hrs then serve.

Garlic Bread

Garlic Bread
Ingredients:-
French bread or baguette
50g Butter
5 cloves of garlic
A handful of parsley or coriander
Salt
Pepper

(1) Preheat oven around 180-200 degree.
(2) Put aside the butter to soften, then smashed and mince the garlic and freshly chopped pasley/coriander.
(3) Add the garlic and pasley into the butter and mix well.
(4) Cut the baguette around 2-3cm thick but do not slice it through.
(5) Put a teaspoon of the butter mixture between each slice.
(6) Wrap the bread with aluminium foil and put in the oven for 15-20mins.

Sourdough French Toast with Roasted Peaches & Bacon

Sourdough French Toast with Roasted Peaches & Bacon



Ingredients:-
2 large peaches
1 tbsp Maple syrup / honey
3 Eggs
1/2 cup Milk
1 tbsp Sugar
1 tsp Vanilla essence
6 slices Rustic sourdough baguette (2-3 cm thick)
20g Butter
6 pcs bacons

(1) Preheat oven to 180-200 degree C. Cutpeaches into clices, removing stones. Places in a baking dish and drizzle with maple syrup. Roast for 20mins, turning once or twice, or until tender and caramelised. Remove from oven and cool until just warm, or room temperature.
(2) Meanwhile, whisk together eggs, milk, sugar, and vanilla with a fork. Pour into a shallow dish large enough to hold bread in a shingle layer. Lay baguette slices in the egg mixture and leave to soak for about 5 mins each side, or until it has absorbed the milk mixture.
(3) Melt a little of the butter in a large non-stick frying pan. Cook bread slices in batches over low-medium heat for 2 mins each side, or until lightly golden and egg has set. Add more butter between batches.
(4) While French toast is cooking, cook bacon in another frying pan over medium heat until crisp and golden brown. Serve toast topped with roasted peaches, with the bacon on the side.

Rambutan Fruit Prawn

Rambutan Fruit Prawn
Ingredients:-
1 canned rambutan
10 prawns
5 tbsps milk
4 tbsps mayonnaise
1 tbsp lime juice
5 tbsps rambutan juice (from the canned rambutan)
A little of cornflour
Salt
1/2 egg white only

(1) Shelled and devein all prawns. Make a butterfly cut on the prawns then dry them using paper towel.
(2) Use a big bowl to marinate the prawns by adding egg white, some salt, and a little of cornflour.
(3) Prepare a small pot, cook the rambutan with the rest of the juice from the canned. (Reserve 5 tbsps of rambutan juice for later uses) for about 3 minutes.
(4) Heat the pan with oil to medium heat and soak in the marinated prawns for 40 seconds. Remove from pan and drain the excess oil.
(5) In another bowl, mix well the milk, mayonnaise, lime juice, 5 tbsps rambutan juice, and 1/3 tsp of cornflour to form the salad sauce.
(6) Cook the salad sauce in a pan and add the cooked rambutan first, then, add in the cooked prawns.
(7) Lightly stir fry and ready to serve.

Chilli Crab

Chilli Crab

Ingredients:-
2-3 crabs (depends on the size)
3 tbsps oil
3 cloves garlic, sliced
2 fresh hot red chillies, deseeded and sliced
1x2cm piece fresh ginger, finely sliced
4 spring onions (use white parts and only 6cm of the greens) chopped
1-2 tsp hot chilli sauce or sambal sauce
1/3 cup tomato ketchup
2 tsp cornflour
1 cup chicken or fish stock

(1) Clean the crabs thoroughly, cut into pieces with leg attached.
(2) Heat oil in wok and add crab pieces, garlic, chillies, ginger, and spring onion white parts. Stir fry over high heat. Then, lifting and turning the crab until the shell reddens and crab almost cooked (about 2 1/2 mins).
(3) Add chilli sauce or sambal to the pan with tomato ketchup, and stir briefly.
(4) Stir cornflour into the stock and pour into the pan.
(5) Shimmer, stirring over high heat until the sauce glazes and crab is cooked.
(6) Add green parts of spring onions. (Optional: May add egg to the pan with stock).

Hokkien Meat Balls

Mama の Pork Meat BallsIngredients:-
500g Minced Pork Meat
5pcs Cracker biscuit (mashed evenly)
1 tsp Salt
1 tsp Soya sauce
1/4tsp Pepper
2 tsp Oyster Sauce
1 tbsp Corn flour
1 Egg
5pcs Shallot (finely chopped)


(1) Pour the oil into the frying pan, enough to cover 3/4 of meat balls.
(2) Heat the oil in high temperature.
(3) Mix all ingredients (don't overwork to avoid denser product) and form the meat mixtures into balls about 1 inch in diameter.
(4) Deep fry the meat balls until golden brown.
(5) Serve with chilli sauce.

Baked Cheesecake

Baked CheesecakeIngredients for cheesecake crust base:-
3 tbsp unsalted butter, softened
3 tbsp sugar
1 egg yolk
1/4 tsp salt
1 cup all purpose flour
1/4 tsp baking powder

(1) Before making the cheesecake, it would be good to have the crust ready.
(2) Preheat oven at 325 degree. Get ready the baking pan with baking paper on it so that the crust won't stick on the pan.
(3) Add butter and sugar in a big bowl and use the machine to beat till light and fluffy.
(4) Add in egg yolk and continue to beat till smooth.
(5) Use another bowl to mix flour, baking powder, and salt.
(6) Gently add in flour mixture to the butter mixture using a folk or spoon to mix them well.
(7) Once done, pour the complete mixture to the baking pan and slightly press it firm then bake for 15-20 mins at low temperature or until golden brown.
(8) Take out and put aside get ready for cheesecake filling.

Ingredients for cheesecake filling:-
450g softened cream cheese
1 cup sugar
1 tsp vanilla extract
1 tsp lemon juice
4 eggs

(1) Preheat oven at 325 degree.
(2) Use machine to beat the cream cheese till smooth. Occasionally stop and scrape the bowl to release the air.
(3) Add in sugar and continue to beat till combine. Stop and scrape.
(4) Add in vanilla and lemon juice. Mix only until absorbed. Stop and scrape.
(5) Add in eggs one at a time. Mix until each egg absorbed, stop and scrape, then, add in another one till all eggs added to the mixture.
(6) Once the mixture is well mixed. Pour the mixture to the crust pan.
(7) Before baking the cheesecake, put the baking pan over another bigger pan with some water on it so that it will maintain the moisture of the cheesecake while baking and prevent cheesecake from crack.
(8) Bake for 60 mins or until firm.
(9) Cool it and wrap with foil to keep in fridge for one day before unmolding it.

Cheese Fingers

Cheese Fingers Ingredients:-
1 Egg
2 Sheets of baking pastry
Cheddar cheese (cut in cube)
Parmesan cheese
Some bacon chips
Pinch of sugar

(1) Preheat oven at 200 degrees.
(2) Prepare the baking tray with baking sheet.
(3) Take out one sheet of baking pastry, brush a layer of egg liquid on it.
(4) Sprinkle the parmesan cheese then bacon chips on the pastry sheet.
(5) Cover with another sheet of pastry.
(6) Brush the egg liquid on top of second pastry sheet and sprinkle cheddar cheese on it.
(7) Press the cheddar cheese cubes into the pastry then cut the pastry into long strip shape.
(8) Twist the pastry strip and lay in the baking tray.
(9) Sprinkle some sugar on top of it before putting into the oven.
(10) Bake for 15-20 mins or until golden brown.

Banana Cakes

Banana cakeIngredients:-
2 Bananas
2 tbsps Golden Syrup (can be replaced by honey)
3/4 cup sugar
1 Egg
1 cup Self-raising flour
Pinch of salt
(1) Preheat oven to 180 degree.
(2) Grease baking tray.
(3) Mashed bananas and add in golden syrup (or honey).
(4) Add sugar to banana mixture.
(5) Add in egg, flour, salt, and lightly mix and fold in the mixture until combined.
(6) Pour into tray and bake for 30 mins or until cook.
(7) Cool for 10 mins and taken out from the tray.

Chocolate Chips Cookies

Chocolate Chips Cookies
Ingredients:-
150g Softened butter
1/2 cup Caster or white sugar (better to be 100ml)
1/2 cup brown sugar (better to be 100ml)
1 tsp Vanilla extract
1 Egg
1 3/4 cup Plain flour
3/4 cup Chocolate chips
Handful of chopped nuts (Cashew or Almond nuts)


(1) Preheat oven at 160 degree celsius. Get ready the baking tray.
(2) Beat butter + white sugar + brown sugar + vanilla extract for 1-2 mins or until smooth and well combined. Then add in the egg and mix well.
(3) Once the mixture is well combined, stir in the flour to the butter mixture in two batches.
(4) Once the mixture is well mixed, add in the chocolate chips and nuts to the mixture.
(5) Then, use a spoon to make a spoonsful mixture and place to the baking tray accordingly. Press slightly to flattern the surface.
(6) Bake for 15-18 mins or till golden brown.

Basic muffins

Basic MuffinsIngredients:-
250g plain flour
150g sugar
6g baking powder
1/4 tsp salt
1 egg
200ml milk
110g butter, melted
1tsp vanilla essence
Some chocolate chips

(1) Preheat oven at 190 degree C / 375 degree F. Prepare the muffin tray.
(2) Mix flour, sugar, baking powder, and salt in a big bowl.
(3) Use another bowl and mix egg, milk, melted butter, and vanilla essence.
(4) Pour in the wet mixture into the flour mixture and stir well.
(5) Add in the chocolate chips to the muffin mixture.
(6) Pour into the tray to 3/4 full and bake for 15-20 minutes.
(7) Once done, take out and sprinkle with some icing sugar before eat.

Blueberries Muffins

Blueberries MuffinsIngredients for muffins:-
190g all purpose flour
150g white sugar
3g salt
9g baking powder
80ml vegetable oil
1 egg
80ml milk
145g fresh blueberries

Ingredients for crumb topping:-
100g white sugar
40g all purpose flour
55g butter, cubed
3g ground cinnamon

(1) Preheat oven at 400 degree F (200 degree celcius). Prepare the muffin cups or tray.
(2) Combine flour, sugar, salt, and baking powder together.
(3) Combine vegetable oil, egg, and milk in another bowl.
(4) Mix the egg mixture into the flour mixture. Once combined, add in the blueberries. Do not stir too much as it may spoilt the blueberries.
(5) Fill the muffin tray to 3/4 full.
(6) Add all ingredient of the crumb topping together and combine well. Sprinkle on top of the muffins mixture in tray.
(7) Bake for 20-25 minutes or till golden colour.

Banana & Buttermilk Muffins

Banana & Buttermilk MuffinsIngredients:-
2 cups plain flour
1 tsp ground cinnamon
1 tsp baking powder
2/3 cup light brown sugar
125g butter, chopped
3 very ripe bananas, mashed
1 cup buttermilk
2 eggs
Zest of 1 lemon

(1) Preheat oven to 200 degree celsius. Prepare the muffin cups / tray.
(2) Sift flour, baking powder, and cinnamon into a large bowl. Stir in brown sugar.
(3) Melt butter in a heatproof bowl in the microwave. Place butter, bananas, buttermilk, eggs, and lemon zest in a large jug. Whisk with a fork to combine. Using a large metal spoon, stir banana mixture into flour ingredients until combined (do not overmix).
(4) Spoon mixture evenly into the muffin tray. Bake for 18-20 minutes until well risen and golden.
